Keto Ice Cream
Ingredients
6 Eggs
1 Cup Sweetener *
2 cups Cream
1 cup Almond Milk
1 tsp Vanilla**
Directions
- In a mixing bowl crack the eggs, and whisk thoroughly at high speed.
- Add Vanilla and cream, whisk
- Add Almond milk, whisk.
- Pour into frozen ice cream maker bowl, insert paddle, turn on machine.
- Wait 30 minutes then... YUM!
- Add toppings to your hearts's desire!
* Note : If not Keto, then use sugar. Optional: If using an Erythritol blend,add 1 TBS vodka, which helps in the freezing process and partially eliminates crystallization. Whatever sweetener you use put in the equivalent sweetness to sugar. For example, allulose would be 1 1/3 cups, where as monkfruit/erythritol blend (Lakanto) would be 1 Cup.
** You can also add 1/2 Tsp (or to taste) of other flavorings: e.g. lemon extract, maple extract, coconut.
Also, You can add other ingredients such as chocolate chips, berries, or nuts during the last five minutes of freezing the ice cream.
